How do you cook grits?

This is not The way, but it is our way. Simple, no fuss no muss. The ratio is 4:1, four parts water to one part corn. 1 cup grits is a good amount for a meal for 2 hungry farmers. 

  • Bring 4 cups of water to a boil.

  • Once boiling, add 1 cup of grits. Quickly skim off the hucks (the bits of fiber that will float to the top, akin to the chaff of wheat) - Emilty Megget

  • Add salt. 

  • Give a good stir. 

  • Cover with a lid. Cut the heat. Let sit for an hour. 

An hour?! Yes, that’s how we do it. In the morning, we’ll put a pot of grits on the stove and leave for an hour or so while they cook to work around the farm, go for a morning walk, water the plants in the greenhouse, or enjoy a cup of coffee on the porch. In the evening, for a more complex meal, that is when you can be prepping your toppings- sauteing onions, vegetables, going on another walk with your dog, etc. If you want to shorten the cooking time, which we do if we’re in the kitchen already, instead of covering the pot of grits with a lid and turning off the heat, adjust the heat to medium- low and stir more regularly.
