Polenta & Uncle Chris

If we could afford a sales guy, my Uncle Chris would be hired. After our first year of growing and milling corn, we gifted some to my favorite godparents. After I told my Aunt Laurie how Duane and I prepare our polenta, she ran with it and gets 4 star reviews from my Uncle every time. This is the most rounded out, nourishing meal, and a weekly go-to. The beautiful part of this meal is the combination of bright colors, the golden yellow corn, deep greens, ruby red from the tomatoes. There is a balance of savory, earthy, acidic, and sweet. 

BASE: Bowl of polenta 

ADD: 

+ Sauteed garlic & greens(spinach, kale, broccoli rabe) 

+ Roasted tomatoes with salt, pepper, paprika, and more garlic

+ Caramelized diced onions in butter.

+ Mushrooms

+ Sausage
